Soulful Chicken and Rice


Let's elevate your Monday nights with our easy one-pot chicken and rice dinner!


Ingredients:

  • 4 chicken thighs, skin-on, bone-in

  • 1 tablespoon vegetable oil

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 1 bell pepper, diced (any color)

  • 1 cup long-grain white rice

  • 2 cups chicken broth

  • 1 teaspoon smoked paprika

  • 1 teaspoon dried thyme

  • Use your favorite seasoning blends!

  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Season the chicken thighs generously with your favorite seasoning blends, smoked paprika, and dried thyme.

  2. In a large skillet or Dutch oven, heat vegetable oil over medium heat. Add the chicken thighs, skin side down, and cook until golden brown, about 5 minutes per side. Remove chicken from the skillet and set aside.

  3. In the same skillet, add diced onion, minced garlic, and diced bell pepper. Sauté until softened, about 3-4 minutes.

  4. Stir in the rice and cook for an additional 1-2 minutes, until lightly toasted.

  5. Pour in the chicken broth and bring to a simmer. Nestle the browned chicken thighs back into the skillet, skin side up.

  6. Cover the skillet with a lid and reduce heat to low. Let the chicken and rice simmer for 20-25 minutes, or until the rice is tender and the chicken is cooked through.

  7. Once cooked, remove the skillet from heat and let it sit, covered, for 5 minutes to allow the flavors to meld.

  8. Serve the chicken and rice hot, garnished with chopped fresh parsley if desired.
